Recent offerings on the menu at The Atrium at The Allendale Community for Mature Living read like those at the area’s finest restaurants. From filet mignon with a merlot reduction to mahi mahi with a macadamia crust to Long Island breast of duck with a Mandarin orange sauce, the cuisine is the handiwork of Vincent Timony, executive chef and dietary director of this senior living residence.

“Treating residents to only the best cuisine is truly a joy for me,” remarked Timony, who resides in Haledon and has worked in the food industry for more than 32 years. “My goal is to make every meal a culinary event that the residents look forward to so that dinner is a pleasure, not just a time of day.”

With a passion for creating diverse menus, Timony welcomes suggestions from residents and encourages them to provide him with their own recipes. He joined The Atrium in 2009 and now oversees the kitchen staff of 15 as well as the sous chefs. In addition to creating and implementing all of the daily menus, Timony also handles all of the food offerings for the Community’s array of special events.

“Vinny is such a talent in the kitchen,” remarked Mary Stampleman, ADC, Director of Therapeutic Recreation and Community Relations at The Atrium. “His love of cooking for the residents shines through everyday and his personality brings a genuine warmth to the dining room. Timony’s distinguished career includes more than 25 years of on the job culinary training, and in 2002, he became Servsafe Certified. Prior to joining The Allendale Community, Timony worked as the sous chef at Hackensack University Medical Center and as the executive chef of the Studio Café at Florentine Gardens in Rivervale. In addition, he served as the sous chef at Radicchio in Ridgewood and at the River Palm in Edgewater and also was the owner, manager and executive chef of The Courthouse Café in Hackensack.

“The residents delight in having their favorite meals prepared such as chicken cacciatore, veal marsala, pot roast and lobster tails, and I enjoy preparing these specialties for them,” added Timony.

Timony to Present Cooking Demonstrations at The Atrium In the coming months, Timony will begin presenting cooking demonstrations at The Atrium, which will be open to the public. He plans to share some of his kitchen secrets and also discuss how to create a menu. Attendees will have the opportunity to participate in the cooking and of course sample the cuisine.
